Brisket (BRS)

Description:

Located in the region of the sternum, from the fifth to the seventh rib of the chest, it is a flat cut and is obtained by cutting along the natural line between the muscle groups.

In Nicaragua it is known as the chest and is used for cooking Baho as it is for long cooking.

Nomenclature:

  • Nicaragua: Posta de pecho
  • El Salvador: Pecho
  • Panamá: Pecho
  • Guatemala: Pecho
  • Costa Rica: Posta de pecho
