Scotch tender (ST)

Description:

 

A lean cut in the shape of an irregular cone, similar to the shape of the fillet (hence its name), it is found on the upper part of the blade bone, separated along the natural line of the bone.

  • El Salvador: Cachito
  • Panamá: Lomo de paleta
  • Guatemala: Cachito
  • Costa Rica: Cacho de paleta
